Details of products sold: Based in Kendal, Cumbria, we're a street food BBQ business specialising in local, regional, sustainable​ food all cooked over charcoal grills and served with the kind of garnishes that you really won't find anywhere else! We're passionate about local produce and responsible sourcing, so all of our meats are sourced from within a 30 mile radius of Kendal; we use only quality regional breeds, such as Rough Fell and Herdwick lamb, rare breed pork and Lakeland chicken, and focus heavily on regional game (during the season); we use local specialist produce and foraged ingredients - such as Morecambe Bay samphire, wild garlic, meadowsweet, wood sorrel and Douglas fir - to produce flavour profiles not normally found at a street food level. And that's exactly our aim: to produce high-end food at an every-man price point. We also have a zero-waste policy, so everything we produce is served in eco-friendly compostable packaging, and anything we can't use is sent to local food initiatives or turned into compost. Our menu changes on a daily basis, depending on what is at its very best at any particular time, so I've attached the menu from our recent weekend at Fit District Festival in Armathwaite to give you an idea of what we do. We try to keep our offerings to an £8 price point (though this may increase slightly depending on the main ingredient used), all food is prepared freshly to order, and to an extremely high standard. We produce every single component of our dishes ourselves - from sauces and chutneys, to pickles, glazes, crumbs and ferments - the only exceptions being the meats themselves and our bread, which comes from award-winning artisan producer More? Bakery in Staveley. We work out of a 3m x 3m pop-up gazebo with our refrigerated (SWB) vehicle pitched beside it, and require no power supply as we cook everything over charcoal.
